Super Easy Weekday Toddler Oatmeal

On weekday mornings we are usually in a bit of a rush getting Henry in his booster seat and breakfast on the table. Luckily, he LOVES overnight fruity oatmeal.






Here's my super easy recipe!





The first step is to make a fruit puree. An abundance of fruit cubes in your freezer are key to making fruity overnight oats. In a pinch, you can absolutely use a couple of scoops of applesauce instead.

I like to mix fruit together, that way tarter fruit is offset by sweeter fruit. This is a preferred taste combo of my son's. He also really enjoys blueberries and mango. 

In my pot, I've combined one bag each of frozen organic peaches, apricots, and mango. I heat it over medium to get it going and then reduce to low and simmer just until the fruit is very soft. You do not want to reduce the fruit down for a syrup, just soften to blend and combine.




After it's soft, I let it cool at little on the counter top before putting it in my Nutribullet.




I puree the fruit until it is smooth and then spoon it into a freezer tray.



The next day, I transfer the frozen cubes into a ziplock bag for freezer storage. You can see I wasn't overzealous about my label.




I prepare oatmeal for two mornings at a time. Mostly because I have 2 of these handy 1-cup glass pyrex bowls which are the perfect size.

A serving size for my two-year old is 1/3 cup old fashioned (rolled) oats, 1/3 cup whole milk, 1 fruit cube, and a sprinkle of seasoning. I like to use cardamom with peach/mango, but cinnamon also works well. Sometimes I even use ground ginger, I like to mix it up for him. 




Place the prepared oatmeal in the fridge for 1-3 nights, it keeps fine. In the morning, microwave  for 30 second, stir, and serve. You can serve it cold, but we usually warm ours up. 




We also serve 1/2 cup plain whole milk greek yogurt with some mashed banana (after he takes a huge bite like a monkey) or a scrambled egg to round out the breakfast.

  1. I can't wait to try this! I think I'm going back to work part time in October and one thing I've been thinking about is the morning routine / how to get out the door quickly so I don't have to wake up the little guy any earlier than possible. We both love oatmeal and I'm definitely going to try this!
