Healthy Strawberry Shake

I love a green smoothie...a big bunch of spinach blended in with some fruit and yogurt. But that's a smoothie and if I really want ice cream it doesn't do the job. The key to making this healthy alternative extra satisfying is to use frozen fruit and only enough liquid to get to a smooth consistency. The result is a tasty treat resembling soft serve ice cream or a thick milkshake. 







Healthy Strawberry Shake
Yield: 1 serving

Ingredients:
1 cup frozen strawberries
1/2 cup plain yogurt
1/2-3/4 cup unsweetened almond milk (or other non-dairy milk of choice)
1 tsp vanilla extract

Directions:
Combine all ingredients in a high-powered blender. (I love my NutriBullet.) Start with only 1/2 cup liquid and splash in extra as needed until you have a very thick but smooth shake. Pop in a spoon and enjoy the goodness!



You can substitute any frozen fruit you like. But I love plain strawberry! Strawberries also have the benefit of having a relatively low Glycemic Index (GI) of 40, meaning they will not cause a high spike in blood sugar.
