Toddler Meals ~ Cabbage & Chicken Sausage

My son is a big fan of cabbage. It's a relatively inexpensive vegetable and easy to cook. We usually make it with pork and tofu meatballs, but it also can make up a quick lunch. 






Cabbage and Chicken Sausage Saute
Yield: 1-2 servings

Ingredients:
1 chicken sausage (we like Trader Joe's Apple variety)
1/8 of a head of green cabbage
2 tsp butter

Directions:
Slice the sausage in half lengthwise and then in half again to make little triangles. Slice your cabbage into thin pieces. Heat a heavy bottomed or non-stick pot over medium, melt the butter, and add the cabbage. Cook approximately 5 minutes until the cabbage is getting tender. Add the chicken sausage (most chicken sausage is pre-cooked! Double check your package) and saute another 3-5 minutes. Check temperature prior to serving to ensure it is not too hot.

Serve with a piece of fruit! My son has been loving the little mandarin oranges (Halos and Cuties are the 2 most common varieties seen) this season!
