Toddler Meals ~ Tuna Patties

This is one of my standby weekend lunches. It takes only 10 minutes to prepare and, with some side dishes, feeds my son, my husband, and myself!







The secret ingredient to these patties is the mayo which makes them extra delicious!

Tuna Patties
Yield: 5

Ingredients:
1 can Tuna - I like Wild Planet
1 tbsp mayo - I like Trader Joes
1 tbsp mustard - I use spicy brown
1 tbsp pickle relish - I like Trader Joes
1 egg
1 cup bread crumbs*



Directions:
Mix all ingredients in a large bowl. Heat a nonstick skillet over medium heat and add 2 tbsp olive oil to the pan. Form five balls of the tuna mixture, place in the pan, and press down with a spatula. Allow the first side to cook for 3-4 minutes, then flip. Patties should be light golden brown and dry to the touch on both sides.

*I like to use a mixture of bread crumbs. I usually use at least half Panko, a Janpanese style bread crumb which provide a crunchier texture. For the other half I use store bought crumbs or I pulse a piece of whole grain bread in my food processor. Different breadcrumbs will yield slightly different results.
